If you can't see add-on aircraft in CFS2 list, here is a solution. 
There is a problem, when you are trying to install add-on plane into CFS2. Your new plane doesn't appear in the list, when you want to select it. The reason is, that the game can't find some associated files - mainly the sound and panel. Many add-on aircraft use these files from default Flight Simulator planes and also from FS converter files.   
These necessary files are in FS98 ( if you have installed FS converter ). In FS2000 and CFS1 are these files by default.   
Why aren't these files also in CFS2? Don't ask me, I don'know, ask Microsoft ... :-)

If you have FS98, CFS or FS2000
. 
So, you can fix this problem quite easily, if you have FS98, CFS or FS2000.   
 
  • First copy these folders from AIRCRAFT folder from FS98/2000 or CFS

  • to ..\CFS2\aircratf folder : 
     
    • Fsfsconv
    • B373_400
    • C182
    • Lear45
    • Schweizer
    • Sopcamel

    • If you don't want to have these planes in your CFS2 list, just delete files AIRCRAFT.CFG from these folders.

  • And then copy all gauges from GAUGES folder to CFS2\Gauges. There already are FS2000 gauges, so you can skip them. 
After these operations all add-on planes should work fine.

If you have CFS2 only
. 
If you haven't FS98, CFS or FS2000, you have 3 choices: 
  • If you don't care, that your plane won't have any panel and will be silent, 

  • just delete these files: panel.cfg and sound.cfg
    You will find them here: 

    ...CFS2\Aircraft\your plane\panel 
    ...CFS2\Aircraft\your plane\sound
      

  • If your plane is similar to some default CFS2 fighter, you can refer to its panel and sound. Just edit files  panel.cfg and sound.cfg.You can use standard Windows Notepad
  • If your plane is different and you don't want to assign some default files, then you must download another sound and panel. After their installation your plane should work.
